This unit has the capacity needed for pressure cooking inexpensive meat cuts to juicy tenderness in a short time and for preparing large quantities of food. Canning Smoked Fish- Freezing Recommended
Smoked Fish Safety- Ans. to Question
From the pdf instruction booklet: "SMOKED FISH
(Salmon, rockfish and flatfish (sole, cod, flounder) and other fish)
Caution: Safe processing times for other smoked seafood have not been determined. Those products
should be frozen. Smoking of fish should be done by tested methods. Lightly smoked fish is
recommended for canning." I believe the reason why the smaller version is not recommended is because of heat, but I can't be certain. Either way, I would freeze smoked fish rather than can

I'm looking for a small pressure cooker to process jars of salmon. This size would work best for my needs, but I see it is not recommended for doing fish. I have several friends who have used this size for fish processing for decades. What is the reason it isn't recommended for fish? I only can pint size jars. Thank You!
